Title: Timothy's Chocolate Fleece

Yield: 10 Servings
12 oz Sweet cooking chocolate or
- chocolate chips
4 tb Strong coffee
1 tb Unsalted butter
4 lg Eggs
1 ts Vanilla
Break chocolate into squares and put them in a bowl with
4 tablespoons of strong coffee. If using a microwave,
cook on High for 1 minute, stir and if more time is
needed to melt chocolate, cook in increments of 15
seconds. If using conventional stove, place the pan over
gently simmering water and leave the chocolate to melt,
stirring occasionally. Remove the bowl from the water and
stir in the butter and vanilla.
Separate the eggs and beat the whites until stiff. Beat
the yolks into the slightly cooled chocolate mixture,
then gently fold in the egg whites. Spoon the fleece into
individual glasses and leave to set in the refrigerator
for about one hour. This is an incredibly rich experience
in chocolate.
