Title: Cecil's Sweet Potato Pie

Yield: 8 servings
2 1/2 lb Sweet potatoes
1/2 c Butter
2 ts Grated lemon peel
1 tb Pure vanilla extract
2 ts Ground cinnamon
28 oz (2 cans) sweetened condensed
- milk
2 ts Nutmeg
1/2 ts Salt
5 lg Eggs
2 lg Unbaked deep dish pie crust
Boil sweet potatoes (skin on) in a large pot until
tender. Drain and peel off the skin.
Set oven @ 350ºF/175ºC
Beat sweet potatoes and butter in large bowl until
smooth
Add sweetened condensed milk, lemon peel, vanilla,
cinnamon, nutmeg, salt and eggs; mix well. Pour into
crusts.
BAKE 40 minutes or until golden brown. Cool. Garnish as
desired (I usually sprinkle nutmeg, sugar and a little
lemon juice on the top to give it extra flavor and a li'l
crunch)
